In a users profile, it would allow them to choose if they want to see the categorie or not, with permissions of corse. So basically have some check boxes on the cats they are allowed to see already.

uh, you can create restricted boards based on membergroups
to do this, check the Admin FAQ (sticky topic in Administration Help board)

I prefer collapsable categories to this, but it's the same idea.

yes, but this woul be an advanced collapse cats, that way i dont have to freaking look at allllllll the cats i have collapsed.

It would be a nice touch  :P

Maybee even let users arrange how they want them to be displayed also.

If you have a lot of categories, you probably should shrink down the number of boards you have.. ::).
